This documentary follows three Quebec chefs who got off the beaten track to offer gastronomy that brings us together and reflects who we are. In the forest, fields, and along the St. Lawrence River, they pick startling ingredients and lay the territory’s fruits right on the plate. By doing so, these gourmet creators draw a mentality shift toward the flowering of a kind of culinary art in harmony with nature.

Nicolas, very loyal to his collaborators, has invited us to work as cinematographer and sound technician on several of his film projects. It's a great privilege to be able to share his ideas over the years.
Nicolas is a man sensitive to his environment, to cultural and culinary life, and to the people who build things. He has a talent for highlighting the beauty of these inspiring artisans who are involved in their communities and telling their stories.
He has a patient eye for these passionate people. He spends a lot of time with them, and he listens too. That's a great quality.
During the filming of Chef-fe-s de brousse, we saw a lot of the country, got into the kitchens, and certainly ate well!
Anecdote... On the evening of Saint-Jean Baptiste Day, in Colombe's kitchen, a small, busy space, there was only room for the camera and François. With microphones hidden between the dishes and the boom out the window, Mélanie, and Nicolas spent the evening on the balcony with the mosquitoes. Great memories, laughter, and fun.
