Arnaud Hée met en œuvre rendez-vous réguliers, cycles et rétrospectives comme programmateur pour La Cinémathèque du documentaire à la Bibliothèque publique d'information (Centre Pompidou) depuis 2018, parmi lesquels : « Pasolini, pasoliniennes, pasoliniens », « Laila Pakalnina : drôle de réel », « Alain Cavalier, Ross McElwee : (auto)portraits ». Il écrit aussi pour le cinéma pour les revues Bref et Images documentaires, auparavant pour Études et le site critikat.com, s’intéresse beaucoup à l'éducation au cinéma en direction des jeunes publics, il a aussi enseigné l’analyse filmique à la Fémis (École nationale supérieure des métiers de l'image et du son). Il a contribué à plusieurs ouvrages collectifs, dernièrement Sergueï Loznitsa, un cinéma à l'épreuve du monde (2021), Il cinema secondo : Alessandro Comodin, Michelangelo Frammartino, Pietro Marcello, Alice Rohrwacher (2022).
